Cast Iron Pan Baked Eggs w. Broccoli and Potato

This is a marvelously easy way to make perfect eggs that will be nicely cooked and still have a runny yolk. The best part is that you can add vegetables like potato and broccoli.


Take a cast iron pan and grease it lightly with olive oil. Crack 4 or 5 eggs into the pan being sure to leave the yolks intact.


Take some cooked potato and broccoli cut into pieces and place into the pan around the yolks. Season to taste with sea salt and black pepper. You can also use other vegetables like grape or cherry tomatoes or broccoli. It is an ideal way to use up leftover vegetables. Other alternatives would be crumbled cooked bacon or grated cheese.


Meanwhile, preheat your oven to 500 degrees. Place the cast iron pan in the oven and bake for around 7-10 minutes. You want the white of the egg to be cooked but the yolk to still be runny.


Remove from oven and serve immediately with whatever you enjoy eggs with, like buttered toast or English muffins, has browns, bacon or a breakfast mimosa.
