Mediterranean style ground beef with spinach and feta




Today we are going to take a look at recipe that combines ground beef, spinach, green pepper, tomato, seasonings and spices and feta cheese for a quick and easy to make dish with Mediterranean style flavours.


Ingredients:


2 pounds ground beef

1 large green pepper

1 bag pre-washed spinach or baby spinach

1 - 796 ml can of herb and seasoned diced tomatoes

feta cheese block or feta cubes

2 tablespoons garlic powder

1 tablespoon garlic salt

2 tablespoons hot chili flakes

2 tablespoons dried oregano

1 tablespoon dried thyme

1/2 teaspoon sugar

1 teaspoon red wine vinegar

salt and pepper

olive oil


To start, seed the green pepper and chop it into smaller pieces.


Heat some olive oil to medium-high in a large metal pot and add the chopped green pepper. Sauté for around 4-5 minutes, stirring regularly, until it gets softer and slightly blistered.



Add the can of diced tomatoes and bring to a strong simmer. Stirring the tomato and pepper add the sugar and red wine vinegar. Continue to simmer the tomato reducing and thickening it, stirring regularly, for around 8-10 minutes.



Add the ground beef and break-up and stir into the tomato and peppers.


Add the garlic powder, garlic salt, chili flakes, oregano and thyme. Continue to stir the beef until fully browned and cooked, around 5-6 minutes.


When fully cooked taste and add salt, pepper and extra seasonings to taste.


Simmer for around another 5 minutes.


Add the spinach in handfuls and stir in. A full bag/plastic tib of spinach may seem like a lot but it will very quickly wilt and reduce in size as it cooks.


Once you have added all the spinach, simmer for another 5 minutes stirring regularly.


As you plate the dish top with crumbled feta pieces or cubes.



There are so many ways you can serve this.


Over rice or egg noodles. On top of pita or naan. With some tzatziki on top. With some extra hot sauce. Many variations will come to mind.
