The Soviet English language magazine Sputnik often had a food feature that would try to familiarize its readers with some recipes from the cuisines of one of the many nations or regions that made up the USSR.
In this installment from March, 1968 they looked at dishes from the Azerbaijan SSR.
Leading in they advise that anyone taking on these recipes should have a lot of mutton, patience and good company!
Three of the five recipes do use mutton, and they all look very good. There is also a chicken dish and "how to" for making Azerbaijani tea with cinnamon.
