Published in 1964, The Art of Mexican Cooking was an attempt to present a large number of Mexican recipes and cooking techniques to an American audience.


While it had no photographs, it is full of cute little illustrations and really does try to cover all the bases from appetizers and soups, to enchiladas and tacos, to beans and rice and on and on. It has an impressive array of recipes, techniques and sections over 309 pages.


Here we have highlighted a number of dishes including guacamole with several variations, a taco dish they put on the back cover, one of my personal favourites Huevos Rancheros, an oyster casserole, an enchilada recipe, a rabbit dish, a couple of deserts and more.
